Perhaps I am being a bit elitest, but you're talking to someone who came from an era where we had games like Battletoads and Blaster Master that were legitimately difficult, not like games today that are made artificially challenging through lazy programming.
For me, as far as Mario games go, if it's not any more difficult than the special Star Road levels in in Super Mario World, than it's not difficult at all. I loved the DKC games because they were always hard, but they were fun. You felt challenged, not cheated, which is a huge problem many games that claim to be difficult have today.
For example when I play Dead Rising 2, and all of a sudden get bum rushed by 10 Zombies all at once or a boss fight I didn't know was coming, and I didn't get the opportunity to save and lose 2 hours of gameplay, I feel cheated. When I die playing something else due to tricky level designs or enemy patterns that take a while to figure out and master, I feel challenged.
