For what it's worth, we outlawed any player playing outside of their given position on offense because of the reason you mentioned...it gives people incorrect info in the game. Despite any honest or legitimate reasons for doing it, it creates almost an unintentional exploit. Whether fero was aware of it or not, his opponents were potentially seeing 2 RB 2 WR 1 TE sets when he was actually in single back. It's stupid...but it's EA...and it's misleading.
Like you said though, the game should just let you change players to whatever position you think their skills would suit them in. I'm sure EA would claim they don't do that as a means of preventing exploits though, lol...as though the game is free of them in its current state. It would be interesting to see people change some of the college QBs back from WR though to see what they could do (Brad Smith, Armanti Edwards, etc)...or some CBs to WR for that matter. Also, not sure if you were only talking in terms of offense, but you can edit defensive players positions too (LOLB to ROLB, LE to RE, etc).
