I've been using the wheel for the entire game. In 150cc races I barely make it to first overall in points. I just tried 150cc Leaf Cup with the nunchuk and double starred it. Definitely more precise since I don't have to be careful about doing tricks or wheelies and I can better spot adjust my direction.
Though the outstanding win could also be due to the fact that I did not see a single blue shell for the entire race and barely any reds actually got the chance to hit me. The only time I fell from first place was when I made driving mistakes like driving off the road or hitting obstacles.

I've been going at things with the understanding that the character doesn't factor into it at all outside of that character's class (in the sense that the choice of class determines which 8 karts/bikes you can select from). Hence, a Bullet Bike driven by Koopa Troopa should perform exactly the same as one driven by Dry Bones.

From what I read, each character gives slight boosts to different stats. Which is probably why Funky Kong is so popular among time trials.
