Crouch-cancelling... my friend said it was in the game, but then I read that it wasn't. Maybe crouching in the game still lets you move not as far back, but retains normal hit recovery.
I had no idea what a jump-cancelled grab is until you posted it. After looking it up, I realized it was because I always used wavedash-cancelled grabs. =) So I wasn't able to really look it up.
L-cancels may or may not be in the game, I have friends that say it is but it's no longer done with L, and online they say it's out and each move has a set recovery time. I think I managed to chain two Marth Fairs though, although that was it because I wasn't really good at doing that in Melee anyway =P
Same with dash-dancing, I heard it's out... or it's in but you have to do it a lot faster.
I used Marth / Peach / Toon Link.
Marth changed a lot, he still has tippers but connecting with a smash at not-quite-tip range was nowhere near as effective as it was in melee. Up+B comes out a lot faster, not sure if he still has the meteor smash because I never learned it, and since I was utterly confused on the level I was on that was all I learned about him.
Peach's vegetables don't bounce on block, to float you simply press down (instead of down+jump, which completely threw me off), and her dsmash went from broken to awful, but her dash attack is much better and if you can pull off the float combos from melee you're pretty much good to go. A friend said that her butt smash was much better but I never liked that move except to cheat and recover from falls when playing in a crappy stage like Fourside.
Toon Link seems a ton crappier than Young Link. It's like his hitbox got a lot bigger but his range got a lot smaller. He lost fire arrows and gets the regular arrows back, which sucks because that was one of the only reasons to use him over regular Link. The boomerang seemed mega slow, up+b had no range. On the upside, his FSmash comes out a lot faster. The Dair is different and makes him drop down mega fast when you use it but with the lack of L-cancels I don't know how useful it'll be, but it seems like the recovery is bit faster than SSB and SSBM.
Wish I could play more and figure it out though. It comes out in March? Man...

I think a lot of techniques in most competitive games are like that, and there were a LOT in Melee. I wouldn't really call it a glitch or a bug or an exploit though. You can say it wasn't in the original design "intentions" but I'd just think it was something that was overlooked and never really considered. =P
