Yeah, the dungeons have all been very good so far. Good puzzles without being obtuse--I haven't gotten stuck for more than a few minutes anywhere yet. Boss battles that are fun and interesting, and not frustrating etc.
It's not perfect by any means. The controls are a bit wonky here and there, the graphics look pretty bad on my HDTV with a lot of jaggies and blurring--but the art design of the game is fantastic (which almost makes it worse as I'd love to be playing this in HD!).
I'm not a big fan of the shields taking damage or having limited adventure pouch slots as that's added some inventory management and item damage/repair stuff to Zelda. One of the things I liked about the series was not having to deal with that kind of stuff. On the other hand, being able to upgrade items is a nice touch and adds some purpose to collecting random items, catching bugs etc.
Yeah, I agree with everything you just said. Although, I haven't experienced any blurriness on my current TV ever since I got component cables, but the jaggies are very noticeable. Like you said, the beautiful art design really makes me wish it were in HD.
And while the controls are definitely a little wonky every now and then (the bug net always feels odd to me), I've been pleasantly surprised by them overall. I'm usually not a fan of motion controls, but they really do add to the game in this case. The directional stuff makes the combat a lot more fun than any other Zelda game.
