Nobody knows for sure. It is possible that you'd have to camp to get one, but most signs point to being able to walk into a store early on launch day and pick one up. However, they will sell out at some point, most likely on the first day.
If you don't want it on launch day though, and want to wait 1-2 weeks like you said, it will be possible to pick one up, and will probably be fairly hassle free with a little bit of work. The Wiis will be restocked fairly often through regular shipments from Nintendo, but the key is to figure out which store is getting a shipment when. I'm sure by calling the stores fairly regularly when you want one, or checking online at places like CAG, it shouldn't be that difficult to find out when a stores are getting shipments.
So the short answer is, it won't be effortless, but odds are it won't require you waiting in line for hours. A little time spent making phone calls or researching online will save you a lot of legwork.
edit: and again, this is all speculation. With TRU adding the Wii as one of their hot items, and with the PS3 being so difficult to obtain, Wii sales could really take off. When you add the price range being something that isn't too ridiculous to give children as a Christmas present, the Wii will definately be a hot item this Christmas. The good news for us who will be getting a Wii is, the harder it is to get one, the better the system is doing, and the better the system does, the more support it will get. Personally, I am hoping that the Wii is in such a huge demand that they fly off the shelves and developers take notice.
