Hmmm, not sure. Just got GOTY for Christmas myself (I set up only my PSN name, didn't even know we could have other accounts on the PSN). But, I did notice things looked different if you aren't hooked up online, so have you tried that? If you have your PS3 hooked up online when playing, pretty sure your PSN name will be the one that shows.
